Zucchini Pineapple Nut Bread

  • 3 eggs, beaten
  • 2 c. sugar
  • 2 c. zucchini, grated
  • 1 c. pineapple, crushed and drained
  • 2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 3/4 tsp. nutmeg
  • 1 c. pecans and walnuts, chopped
  • 1 c. oil
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 c. raisins

    Mix eggs, oil, sugar and vanilla together.

    Add the zucchini and pineapple.

    Combine the dry ingredients and add to the zucchini mixture, mixing well.

    Add nuts and raisins and blend. Pour into 2 greased and floured loaf pans.

    Bake at 350° for 55 to 60 minutes.

    Cool for 10 minutes in the pan, then turn onto racks.
