- 2 eggs
- 1 c. oil
- 2 c. sugar
- 2 c. grated zucchini
- 2 tsp. vanilla
- 1 small (3 oz.) box instant vanilla pudding (use dry)
- 3 c. flour
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 c. chopped nuts
- 1/2 c. maraschino cherries
Directions

1Beat eggs.

2Add oil, sugar, zucchini, vanilla and dry pudding; mix lightly but well.

3Add dry ingredients into first mixture. Fold in nuts and cherries.

4Pour into 2 loaf pans, greased and floured.

5Bake at 350° for 1 hour and 10 minutes.
