- 1 1/2 c. tomato sauce or spaghetti sauce
- 1 large zucchini, scrubbed (not peeled)
- 1/4 c. olive oil
- 1/2 c. chopped onion
- 1/2 tsp. minced garlic
- 1/2 lb. ground chuck or beef
- 1 egg, lightly beaten
- 1/2 c. bread crumbs
- 6 Tbsp. Parmesan cheese
- 1/2 tsp. oregano
- 1 tsp. salt
- 1/4 tsp. ground pepper
Directions

1Cut zucchini lengthwise in half.

2Spoon out pulp, leaving hollow boat like shells.

3Chop pulp.

4Brown ground beef and garlic.

5Add onion and pulp; cook until soft.

6Cool.

7Add slightly beaten egg, bread crumbs, 1/2 Parmesan cheese and oregano.

8Add salt and pepper to taste.

9Spoon stuffing into zucchini.

10Place zucchini in shallow pan.

11Cover with tomato sauce.

12Sprinkle with remainder of cheese.

13Transfer to oven.

14Bake at 350° for 30 minutes or until slightly brown.
