- 1/3 c. biscuit mix
- 1/4 c. grated Parmesan cheese
- 1/8 tsp. pepper
- 2 slightly beaten eggs
- 2 c. shredded unpared zucchini (2 medium zucchini)
- 2 Tbsp. butter or margarine
Directions

1In mixing bowl, stir together biscuit mix, cheese and pepper. Stir in beaten eggs just until moistened.

2Fold in zucchini.

3Melt margarine in 10-inch skillet over medium heat.

4Use 2 tablespoons mixture for each round and cook 2 to 3 minutes on each side, or until brown.

5Makes 6 servings.
