- 1/3 c. Bisquick
- 1/4 c. grated Parmesan cheese
- 1/8 tsp. pepper
- 2 slightly beaten eggs
- 2 c. shredded, unpared zucchini
- 2 Tbsp. margarine
Directions

1In mixing bowl, stir together the Bisquick, cheese and pepper. Stir in beaten eggs just until mixture is moistened.

2Fold in zucchini.

3In a 10-inch skillet, melt margarine over medium heat. Using about 2 tablespoons of mixture for each round, cook 4 rounds at a time about 2 to 3 minutes on each side or until brown.

4Keep warm while cooking remaining rounds.

5Makes about 12 rounds.
