- 8 whole Zucchini
- 2 whole Onions
- 1 clove Garlic
- 3 whole Potatoes
- 1 Tablespoon Butter
- 4 cups Chicken Broth
- 1 cup Milk, Or More As Needed
- 1 Tablespoon Chives
- 1 Tablespoon Parsley
- 1 Tablespoon Oregano
- 1 Tablespoon Soy Sauce, Or To Taste

1In a saucepan, heat the butter and add the chopped onions and garlic. Saute them for about 2 minutes. Add the finely chopped zucchini pieces and saute until liquid is gone. I added the spices to this mixture, but you can wait and add them at the end if you want.

2In a pot, add broth, milk, and peeled chopped potatoes. Boil until potatoes are tender. Add zucchini and onion mix to the potato mix. Mash all the ingredients together.

3I added more milk to get the soup to the perfect consistency. I also ended up adding more seasoning and soy sauce. It just all depends on your taste. I can't stand to eat bland food.
