  • 8 whole Zucchini
  • 2 whole Onions
  • 1 clove Garlic
  • 3 whole Potatoes
  • 1 Tablespoon Butter
  • 4 cups Chicken Broth
  • 1 cup Milk, Or More As Needed
  • 1 Tablespoon Chives
  • 1 Tablespoon Parsley
  • 1 Tablespoon Oregano
  • 1 Tablespoon Soy Sauce, Or To Taste

Directions

    In a saucepan, heat the butter and add the chopped onions and garlic. Saute them for about 2 minutes. Add the finely chopped zucchini pieces and saute until liquid is gone. I added the spices to this mixture, but you can wait and add them at the end if you want.

    In a pot, add broth, milk, and peeled chopped potatoes. Boil until potatoes are tender. Add zucchini and onion mix to the potato mix. Mash all the ingredients together.

    I added more milk to get the soup to the perfect consistency. I also ended up adding more seasoning and soy sauce. It just all depends on your taste. I can't stand to eat bland food.
