Zucchini Soup

Ingredients
- 1 lb. zucchini, sliced thin
- 2 Tbsp. chopped shallots or onions
- 2 Tbsp. butter
- 1 clove garlic, minced
- 1 3/4 c. chicken stock
- 1/2 c. heavy cream
- 1 tsp. curry powder
- 1/2 tsp. salt
Directions

1Put first 4 ingredients in a pan with lid.

2Simmer until tender and steamed but not brown.

3Add stock, cream and seasonings.

4Pour into food processor and blend for approximately 30 seconds.

5Return to soup pot and heat thoroughly.

6This soup can be made the day before.

7Also you can substitute the following for the zucchini: Asparagus, broccoli, spinach or carrots.
