Zucchini Soup

Ingredients
- 2 medium onions, sliced
- 1 zucchini, sliced (not peeled, approximately 3 c.)
- 4 Tbsp. olive oil or butter
- 6 c. chicken stock
- 2 c. lima beans (one 10 oz. pkg. frozen)
- 1 c. peas (1/2 ten oz. pkg. frozen)
- salt and pepper to taste
Directions

1In a 4-quart saucepan, saute the onions and zucchini in the olive oil or butter for about 10 minutes or until browned.

2Add the chicken stock and bring to a boil.

3Add the lima beans and peas.

4When mixture comes to a boil again, reduce the heat and simmer for 20 to 25 minutes or until the vegetables are soft.

5Add salt and pepper.

6Puree all ingredients together in a blender. Return to saucepan; heat and serve.

7Serves 10 to 12.
