Ingredients
- 1 or 2 c. shredded zucchini and/or yellow summer squash
- 1/2 c. chopped onion
- 1/2 c. chopped green peppers
- 1/2 c. chopped celery, particularly the leaves
- 1 14 1/2 oz. can tomatoes
- 1 15 oz. can tomato sauce
- 1 lb. sweet Italian sausage or hamburg
- 1 8 oz. can mushrooms, or use fresh
- 1 can of whole kernel corn
- 2 chicken bouillon cubes dissolved in 1 1/2 cups of hot water
- 1/2 tsp. basil
- 1/2 tsp. oregano
- salt and pepper to taste
Directions

1Place all items in large soup pot and simmer for 1 hour. Granular chicken bouillon can be substituted for cubes or you can use can of chicken stock and eliminate the hot water.
