Zucchini Soup

Ingredients

  • 1 or 2 c. shredded zucchini and/or yellow summer squash
  • 1/2 c. chopped onion
  • 1/2 c. chopped green peppers
  • 1/2 c. chopped celery, particularly the leaves
  • 1 14 1/2 oz. can tomatoes
  • 1 15 oz. can tomato sauce
  • 1 lb. sweet Italian sausage or hamburg
  • 1 8 oz. can mushrooms, or use fresh
  • 1 can of whole kernel corn
  • 2 chicken bouillon cubes dissolved in 1 1/2 cups of hot water
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • salt and pepper to taste

    Place all items in large soup pot and simmer for 1 hour. Granular chicken bouillon can be substituted for cubes or you can use can of chicken stock and eliminate the hot water.
