Ingredients
- 1 1/4 or 1 1/2 lb. Italian sausage (sweet or hot)
- 2 c. celery (1/2-inch pieces), cut on an angle
- 2 c. zucchini, sliced into 1/2-inch pieces
- 1 c. chopped onion
- 2 green peppers (in 1/2-inch pieces)
- 2 (28 oz.) cans tomatoes (whole), peeled
- 2 tsp. salt
- 1 tsp. Italian seasoning
- 1 tsp. oregano
- 1/2 tsp. garlic powder
- 1 tsp. sugar
- 1/4 tsp. basil
Directions

1Brown sausage in a large skillet.

2Drain off excess fat.

3Put celery, onion, green pepper and tomatoes and add all seasonings in large pot and cook while sausage is browning, then add sausage and cook for 10 minutes or so.

4Stir occasionally.

5Add zucchini and simmer covered until vegetables are soft, not crunchy.

6Do not let the vegetables get mushy.

7Makes 3 1/2 quarts.
