  • 1 c. oil
  • 2 c. sugar
  • 3 beaten eggs
  • 2 c. zucchini squash, peeled, seeded and grated
  • 3 c. plain flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 3/4 c. chopped nuts
  • 3 tsp. vanilla

Directions

    Blend oil, sugar and eggs.

    Sift dry ingredients together and mix with oil, sugar and eggs.

    Stir in zucchini, nuts and vanilla. Pour in 2 greased and floured loaf pans.

    Bake at 325° for 1 hour and 10 minutes.

    Cool for 15 minutes.
