Zucchini Squash Loaf

Ingredients

  • 1 c. grated zucchini squash
  • 1 c. sugar
  • 1 egg
  • 1/2 c. cooking oil
  • 1 1/2 c. all-purpose flour
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. baking powder
  • 1/4 tsp. finely shredded lemon peel
  • 1/2 c. chopped walnuts

Directions

    In mixing bowl beat together the zucchini, sugar and egg.

    Add oil and mix well.

    Stir together flour, cinnamon, baking soda, etc. and stir into zucchini mixture.

    Fold in walnuts.

    Pour into a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.

    Bake at 325° for 60 to 65 minutes.

    Cool in pan on rack for 10 minutes.

    Remove from pan.

    Cool thoroughly on rack.

    Wrap and store overnight before slicing.
