Ingredients
- 1 c. grated zucchini squash
- 1 c. sugar
- 1 egg
- 1/2 c. cooking oil
- 1 1/2 c. all-purpose flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. ground nutmeg
- 1/4 tsp. baking powder
- 1/4 tsp. finely shredded lemon peel
- 1/2 c. chopped walnuts
Directions

1In mixing bowl beat together the zucchini, sugar and egg.

2Add oil and mix well.

3Stir together flour, cinnamon, baking soda, etc. and stir into zucchini mixture.

4Fold in walnuts.

5Pour into a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.

6Bake at 325° for 60 to 65 minutes.

7Cool in pan on rack for 10 minutes.

8Remove from pan.

9Cool thoroughly on rack.

10Wrap and store overnight before slicing.
