Zucchini Stuffing

  • 5 to 6 c. zucchini, shredded
  • 1 small onion, chopped
  • 1 tsp. parsley flakes
  • 1 tsp. dried basil
  • 3 Tbsp. melted margarine
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 12 to 14 slices white bread, cubed
  • 1 c. shredded cheese (optional)

Directions

    Place shredded zucchini in a colander.

    Mix with salt.

    Let stand for 15 minutes.

    Using hands, squeeze the excess moisture from the zucchini.

    Mix all ingredients.

    Add zucchini and mix well (the stuffing will seem dry, but the zucchini will make more liquid when baked).

    Pour into greased casserole dish.

    Bake, covered, at 350° for 1 hour and 20 minutes.

    Serve with chicken.
