- 8 c. peeled and chopped zucchini
- 1/2 c. chopped onion
- 8 oz. sour cream
- 1 can cream of chicken soup
- 1 c. shredded carrots
- 1 stick melted oleo
- 1 small bag Pepperidge Farm stuffing
Directions

1Saute zucchini and onion in pan until soft.

2Drain.

3Add cooked zucchini and onion to sour cream, soup and carrots.

4Melt butter and add to stuffing.

5Layer 1/2 stuffing on bottom of large baking dish, layer zucchini mixture, layer other half stuffing. Bake at 350° for 45 minutes to 1 hour.
