Zucchini Stuffing

  • 8 c. peeled and chopped zucchini
  • 1/2 c. chopped onion
  • 8 oz. sour cream
  • 1 can cream of chicken soup
  • 1 c. shredded carrots
  • 1 stick melted oleo
  • 1 small bag Pepperidge Farm stuffing

Directions

    Saute zucchini and onion in pan until soft.

    Drain.

    Add cooked zucchini and onion to sour cream, soup and carrots.

    Melt butter and add to stuffing.

    Layer 1/2 stuffing on bottom of large baking dish, layer zucchini mixture, layer other half stuffing. Bake at 350° for 45 minutes to 1 hour.
