Ingredients

  • 3 cups chopped zucchini
  • 1 large onion, chopped
  • 1 4-oz. can mushroom stems and pieces, drained
  • 1/2 cup Mozzarella cheese
  • 2 Tbsp. butter
  • 8 individual tart shells
  • Pinch of salt
  • Pinch of garlic powder
  • Pinch of pepper
  • Pinch of sugar
  • 1 6-oz. pkg. cream cheese
  • 1/4 cup milk
  • 1 egg
  • 1/2 tsp. salt
  • Cracked pepper

Directions

    Saute zucchini, onion and mushrooms in butter for about 5 minutes.

    Add pinches of seasonings. Cool.

    In bowl, beat cream cheese, milk, salt and egg until well mixed. Add a little cracked pepper. Combine sauteed vegetables into cream cheese mixture. Cook tart shells as directed (they come frozen, 8 to a package). Cool.

    Just before serving, fill tart shells. Sprinkle with Mozzarella cheese and bake at 375° to 400° for 20 minutes.
