Zucchini Vichyssoise

  • 1 large onion, chopped
  • 3 Tbsp. oil
  • 2 lb. zucchini, chopped large (about 8)
  • 3 c. chicken broth
  • 2 Tbsp. fresh basil or 1 1/2 tsp. dry
  • 1/4 tsp. nutmeg
  • 1/4 tsp. pepper
  • 1 c. milk

Directions

    Saute onion in oil.

    Add zucchini, chicken broth, basil, nutmeg and pepper.

    Cover and simmer until tender.

    Puree soup. Return to pan and add milk.

    Serve cold or hot.

    Makes 6 entrees or 10 to 12 small courses.
