- 1 large onion, chopped
- 3 Tbsp. oil
- 2 lb. zucchini, chopped large (about 8)
- 3 c. chicken broth
- 2 Tbsp. fresh basil or 1 1/2 tsp. dry
- 1/4 tsp. nutmeg
- 1/4 tsp. pepper
- 1 c. milk
Directions

1Saute onion in oil.

2Add zucchini, chicken broth, basil, nutmeg and pepper.

3Cover and simmer until tender.

4Puree soup. Return to pan and add milk.

5Serve cold or hot.

6Makes 6 entrees or 10 to 12 small courses.
