  • 3 very large sweet onions, diced
  • 1 1/2 bunches celery, diced
  • 2 loaves bread, crusts removed
  • whole milk
  • 4 eggs
  • Pepper (no salt or thyme if bird is brined)
  • Turkey livers, 3, cleaned
  • 1 stick unsalted butter
  • Olive oil
  • 4 turkey wings
  • In large skillet with lid, melt butter with oilive oil, add celery and onion, pepper, cover over low heat for 2 hours, add liver and cook another 45 min.-1hr. Meanwhile, tear bread into pieces, add slightly cooled, cooked onion,celery, liver mix, add 4 eggs and enough milk to be very moist. Stuff bird.
