Ingredients
- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 4 eggs
- 2 c. shredded carrots
- 1 (8 oz.) can drained, crushed pineapple
- 1/2 c. chopped nuts
- approximately 4 oz. coconut to your taste
Directions

1Lightly mix flour, baking powder, baking soda, salt and cinnamon in mixing bowl.

2Add sugar, oil and eggs.

3Beat 1 minute at medium.

4Stir in carrots, pineapple, nuts and coconut.

5Turn into 3 greased and floured 9-inch round pans or a large rectangular pan.

6Bake at 350° for 40 minutes or until it tests done.

7Cool in pan 10 minutes.

8Remove from pan and finish cooling.

9Ice with Cream Cheese Icing.
