  • 12 cup chopped onion
  • 12 cup chopped green pepper
  • 12 cup chopped celery
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1 (28 ounce) can crushed tomatoes
  • 14 12 ounces Mexican-style tomatoes
  • 14 cup chopped sun-dried tomato (not packed in oil)
  • 1 (16 ounce) can pinto beans, rinsed and drained
  • 1 (16 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 12 cup dark beer
  • 1 tablespoon chili powder
  • 2 teaspoons baking cocoa
  • 1 cup shredded Mexican blend cheese

Directions

    In a dutch oven, saute the onion, green pepper, celery and garlic in oil until crisp-tender.

    Add tomatoes, beans, beer, chili powder and cocoa.

    Bring to boil, reduce heat; cover and simmer for 40 minutes.

    Serve with cheese.
