Ingredients
- 1 teaspoon olive oil
- 1 onion, diced
- 1 garlic clove, diced
- 1 red chili, minced (with or without seeds)
- 1 teaspoon cumin
- 1 red bell pepper, diced
- 10 button mushrooms, sliced
- 1 (400 g) can kidney beans, drained and rinsed
- 1 (400 g) can refried beans
- 1 (400 g) can diced tomatoes
- tortilla, lettuce, tomatoes, avocado, sour cream, limes, to serve
Directions

1Heat the oil in a large saucepan and saute onion, garlic, chilli and cumin until fragrant and soft.

2Add bell pepper and mushrooms.

3Saute until soft.

4Add both types of beans and the tomatoes.

5Bring to the boil then reduce heat to low and simmer for 15-20 minutes.

6Serve with warm tortillas and other fillings at the table for people to wrap into burritos.
