- 15 oz. can black beans, well drained
- 1 c. fat-free sour cream
- 1 1/4 c. thick salsa
- 1/2 c. shredded reduced fat Monterey Jack cheese
- 2 tsp. minced fresh cilantro (optional)
Directions

1Blend beans and 1/4 cup salsa in blender or food processor. Spoon into a 1-quart serving bowl.

2In small bowl, stir together 1/4 cup salsa and sour cream.

3Drop by spoonfuls over beans. Spread to cover.

4Spoon remaining salsa over sour cream.

5Sprinkle with cheese and cilantro.

6Cover and refrigerate for 2 to 24 hours.

7Serve with reduced-fat crackers or baked Tostitos.
