Ingredients

  • 2 12 lbs russet potatoes (the longer the better)
  • 2 -3 quarts canola oil
  • kosher salt, to taste

    Slice washed, unpeeled potatoes lengthwise into 1/4-inch-thick planks, then into 1/4-inch sticks.

    Soak fries in very hot tap water for 1 hour.

    Pat dry and set aside.

    Pour oil into a large, heavy pot, filling no more than halfway.

    Heat over medium-heat just until oil reaches 325 degrees (you can use a candy thermometer.)

    Carefully drop the fries into oil and turn burner to high.

    Cook for about 8 minutes, until barely golden.

    Transfer fries to a paper-lined baking sheet and let rest for 10 minutes, or up to 2 hours.

    Reheat oil over medium-heat to 350 degrees.

    Return half the fries to oil and cook until crisp, 1 to 2 minutes.

    Transfer to paper-lined bowl and sprinkle generously with salt.
