  • 2 Tbsp. cold water
  • 1 unbeaten egg white
  • 1/8 tsp. salt

    Mix all ingredients in top of double boiler with water hot, beating constantly with hand mixer until peaks form when beaters are raised up.

    Especially good on angel food cake.
