  • 2 cups sugar
  • 4 eggs
  • 2 tsp. cinnamon
  • 2 tsp. salt
  • 1-1/2 cup chopped walnuts
  • 1-1/2 cup vegtable oil
  • 2-1/4 cup flour
  • 2 tsp. baking soda
  • 3 cups grated carrots
  • 1 pkg. (8 oz.) cream cheese, softened
  • 2 tsp. vanilla
  • 1/4 cup margarine
  • butter, softened
  • 1/2 box powdered sugar, sifted

Directions

    Cake: Combine oil, eggs, sugar, beat at medium speed for 2 minutes.

    Sift all dry ingredients together.

    Add to egg mixture, beat on low speed for 1 minute.

    Fold in carrots and walnuts.

    Pour into greased and floured 13x9-1/2x2-inch pan.

    Bake for 300F for 1 hour.

    Cool cake completely before frosting.

    Frosting: Blend room temperature cream cheese and butter or margarine.
