  • 1/2 stick margarine
  • 2 c. acorn squash
  • 1 c. sugar
  • 1/2 c. flour
  • 2 eggs, beaten
  • pinch of salt
  • 1 c. milk
  • 1 tsp. vanilla extract
  • cinnamon

    Preheat oven to 450°.

    Melt margarine in 8 x 8-inch baking dish.

    Parboil squash in a small amount of water.

    Scoop pulp out. Place in a bowl; add remaining ingredients, except cinnamon.

    Mix well.

    Pour into baking dish.

    Sprinkle with cinnamon.

    Bake 20 to 30 minutes.
