Acorn Squash With Fruit

- 2 acorn squash
- 1/4 c. packed brown sugar
- 3/4 tsp. ground cinnamon
- 1 tsp. cornstarch
- 1/4 tsp. salt
- 1 c. blueberries (if frozen, thaw and drain well)
- 3/4 c. finely diced apple
- 1 Tbsp. butter
- salt
Directions

1Cut squash in half lengthwise and remove seeds.

2Place in 12-inch plate, hollow side down and stems to the outside.

3Cover with plastic and microwave on High for 10 minutes, turning plate after 5 minutes.

4Test to see if done.

5Do not pierce skin.

6Let stand while preparing fruit.

7Combine brown sugar, cinnamon, cornstarch and the 1/4 teaspoon salt.

8Blend well.

9Stir in fruit. Microwave, uncovered, on High for 4 minutes, stirring after 2 minutes.

10Stir in butter.

11Lightly salt each squash and fill with fruit.

12Serves 4.
