- 6 thick boneless pork chops
- flour
- 1/4 - 1/2 c. olive oil
- 3 cloves garlic
- 1 lg. onion, finely chopped
- 1 small can tomato paste
- 1 c. boiling water
- 1 c. white cooking wine
- 1 tsp. lemon rind
- cracked pepper to taste
Directions

1Dredge pork chops in flour and brown in olive oil in cast iron skillet.

2Add onion and garlic.

3Stir in tomato paste, boiling water and cooking wine.

4Add lemon rind, cracked pepper and salt.

5Bring to a boil.

6More water and wine can be added if sauce does not cover meat.

7Cover and lower heat to simmer until tender, 2 hours or

9Even better if cooked, refrigerated overnight and reheated!!

10Serve with saffron rice.
