  • 2 eggs
  • 14-12 cup milk
  • flour
  • parmesan cheese
  • 4 -6 boneless skinless chicken breasts
  • olive oil
  • 1 (12 ounce) can evaporated milk
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • salt & pepper
  • parmesan cheese
  • 1 teaspoon basil, fresh is best

    Pound chicken flat - 1/4 inch or so.

    Mix the egg and milk together.

    Coat the chicken in flour, the egg&milk mixture, and the parmesan cheese in that order.

    Fry the coated chicken over medium heat using just a small amount of oil.

    The goal is to sear the cheese to the chicken rather than cook the chicken.

    Place the chicken into a 350 degree pre-heated oven for 15-20 minutes.

    While that is cooking, mix the cornstarch with enough water to make a thin paste.

    Heat the evaporated milk, butter, salt&pepper, parmesan cheese, cornstarch paste, and basil together bringing to a boil for one minute.

    The sauce should be heavy like a very thick gravy.

    Serve the chicken covered in sauce to taste.
