- 1/2 lb. pork butt or ribs, cut up in 1-inch cubes
- 1/2 c. soy sauce
- 1/2 c. vinegar
- 2 c. water
- 1 bay leaf
- 1 tsp. crushed ginger root
- 3 cloves garlic, crushed
- 6 whole peppercorns
- salt and pepper to taste
- 1 lb. chicken, cut up
Directions

1Place all ingredients, except chicken, in a pot and simmer, covered, for 15 minutes.

2Add chicken and simmer for another 15 minutes, until chicken is tender.

3Continue to simmer, uncovered, until liquid is reduced to about 1/4 cup.

4Serve hot over white rice.
