Ingredients

  • 3 lbs chicken
  • 1 tablespoon garlic, chopped
  • 12 cup white vinegar
  • 1 cup water
  • 1 teaspoon salt
  • 1 bay leaf
  • 12 whole peppercorn
  • 3 drops red food coloring
  • 2 tablespoons soy sauce
  • to taste oil (for frying)
  • 12 can coconut milk

Directions

    Heat 2 Tbsp.

    of oil and fry garlic until brown.

    Add chicken, vinegar, water, salt, bay leaf, peppercorns, food coloring, soy sauce and coconut milk.

    Bring to a boil then simmer for 30 minutes.

    Remove chicken and let cool.

    Heat sauce and reduce liquid until sauce thickened.

    Heat oil and fry chicken pieces until brown on all sides.

    Serve with sauce and steam rice.
