- 4 good thick pork chops, leave the fat on
- 1/2 bottle good red wine (if you wouldnt drink it, dont cook with it!)
- 1 tsp. ground cinnamon
- 1 tbsp. coriander seeds, crushed (grind to a powder if you dont like the seeds)
- 1 tbsp. vegetable oil
Directions

1Mix together the red wine, cinnamon and coriander seeds.

2Bring to the boil in a small saucepan.

3Boil for about 2-3 minutes.

4Turn off the heat.

5Pour the marinade over the chops and soak overnight.

6Next day drain the marinade but do not throw away.

7Fry the chops in the oil until browned on both sides.

8Season with salt and pepper.

9Pour in the reserved marinade and then bring to the boil.

10Skim off any scum on the surface.

11Lower the heat and simmer for 1 hour.

12Add peeled potatoes if wished, they will soak up a lot of the sauce.
