- 1 3/4 cups flour
- 1 teaspoon baking powder
- salt
- 1/2 cup sugar
- 6 3/4 tablespoons milk
- 1 3/8 tablespoons mint syrup
- 2 tablespoons peanut oil
- 2 eggs
- 5 5/8 tablespoons softened butter
- 5/8 cup chocolate chips
Directions

1Preheat the oven to 175C.

2Combine the flour, the baking powder, a pinch of salt, and the sugar in one bowl and the milk, the mint syrup. the oil, and the eggs in another.

3Mix the dry ingredients with the wet ingredients, then add the softened butter and the chocolate chips.

4Fill the muffin liners and bake the muffins for 20 to 25 minutes.

5If you would like to add chocolate icing: melt dark chocolate over a double boiler and ice the top of the muffins.
