- 2 c. black-eyed peas
- 1 chopped onion
- 1 beaten egg
- 1 tsp. salt
- 1/4 tsp. pepper
- red pepper or Tabasco to taste
- oil to deep fry
Directions

1Soak beans in water for 1 hour.

2Rub briskly to remove skins. Grind beans in blender or processor with enough water to make consistency like cake batter.

3Add remaining ingredients to bean mixture.

4Mix thoroughly and drop by teaspoonfuls into hot oil. Fry until golden brown.

5Remove from oil and drain on paper towels.

6Akara is best when served hot!
