- 6 oz. black-eyed peas
- 1 medium onion
- salt and pepper to taste
- vegetable or palm oil
Directions

1Soak peas in cold water for a few minutes.

2Dehusk peas by grating in a blender for a few seconds.

3Add water and peas to a large bowl; drain water and black-eyes.

4Repeat several times until black-eyes and husks are removed.

5Blend the peas until very fine. The mixture should be thick.

6Finely chop onion and add to the blended peas.

7Add salt and pepper to taste.

8Mix thoroughly.

9Heat oil and, using a spoon, scoop small portions into the oil and deep fry until golden brown.

10Serve with custard, cereals or Quaker oats for breakfast.

11It can also be served as an entree for dinner or eaten as a snack.
