Ingredients
- 3 eggs
- 2 cup chopped potato's (4 small potato's)
- 4 slice bacon (low sodium)
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced red peppers
- 1/4 cup diced red onions
- 1 tsp butter
- 1 tsp bacon grease
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1 tsp dried parsley
- 1 pinch rosemary
- 1/4 tsp salt
Directions

1Start by frying your bacon and make sure to preserve 1 tsp of the bacon fat

2While your bacon is frying peel your potato's and chop them up small

3Also chop up your onions and red peppers and set aside

4In a next frying pan use the bacon grease and butter and start frying the potato's on medium heat

5When the potato's start to get crispy add the onions and peppers and the rest of the seasons except 1/2 of the parsley and fry just until the onions and peppers start to soften

6In a bowl whisk your eggs together and add the other half of the parsley to the egg mixture

7Pour the egg mixture over the potato's spreading it evenly

8Chop up your bacon in to chunks and put it on top of the egg mixture and cover and cook on low for about 10 minutes

9About 8 minutes of cooking uncover and add the shredded cheese and cover back for 2 minutes and enjoy
