- 1 lb skinless chicken breast
- 2 tablespoons oil
- 12 onion
- 2 celery, sliced on diagonal
- 34 cup almonds, separated
- 14 teaspoon salt
- 18 teaspoon white pepper
- 1 teaspoon cornstarch
- 1 tablespoon soy sauce
- 1 teaspoon ginger, minced
- 1 egg white
- 1 tablespoon vinegar
- 2 tablespoons soy sauce
- 12 teaspoon salt
- 1 teaspoon sugar
- 12 teaspoon cornstarch
Directions

1Dice chicken into 1 inch cubes.

2Combine marinade ingredients, add chicken and mix well.

3Let stand 1/2 hour.

4Heat oil in skillet, add chicken and stir fry until browned.

5Remove chicken and drain well.

6Stir fry, onion, and celery for about 1 minute, until vegetables are crisp-tender.

7Combine ingredients for seasoning sauce in a small bowl, mix well and add to skillet and boil for 2 minutes.

8Add chicken and 1/2 cup almonds to boiling sauce mixing until well coated.

9Let stand for 5 minutes before using.

10Top with remaining almonds.
