  • 1 cup sugar
  • 1 egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 14 teaspoons baking powder
  • 14 teaspoon salt
  • 36 whole almonds

    Preheat oven to 350F Line baking sheets with parchment paper.

    Combine shortening and sugar in a large bowl.

    Beat at medium speed with electric mixer until light and fluffy, about 5 minutes.

    Beat in egg and almond extract until well blended.

    Combine flour, baking powder, and salt in a medium bowl.

    Add to shortening mixture; blend well.

    Wrap dough in plastic wrap, refrigerate for 2 hours.

    Roll rounded tablespoons of dough into balls.
