Almond Custard

Ingredients

  • 2 c. heavy cream
  • 1 cinnamon stick
  • 3 oz. blanched almonds, ground
  • 1 tsp. rose water
  • 1/2 c. sugar
  • 1 egg
  • 5 egg yolks
  • 2 Tbsp. brandy

Directions

    Combine cream and cinnamon in saucepan. Bring to a boil. Remove cinnamon. Add almond, rose water and sugar.

    Beat egg and yolks together in separate pan.

    Place over low heat and add hot cream mixture, stirring constantly.

    Continue cooking and stirring constantly until the custard coats a spoon. Stir in the brandy and chill.
