Almond Float Fruit Salad

Ingredients

  • 1/2 c. evaporated milk
  • 1 1/2 c. water
  • 1 1/2 envelopes unflavored gelatin
  • 1/2 c. sugar
  • 2 tsp. almond extract
  • 1 can fruit cocktail, peaches or desired fresh fruits such as: grapes, cantaloupes, peaches, melons, lichee

Directions

    Dissolve gelatin in 1/2 cup water.

    Heat evaporated milk, remaining water and 1/2 cup sugar to just below boiling.

    Add gelatin to hot mixture and stir until completely mixed.

    Cool. Add almond extract.

    Pour into a flat pan and refrigerate.

    When solid, cut into cubes.

    Combine the chilled fruit mixture with syrup and the almond cubes.
