Almond Holiday Rice

- 1 c. rice
- 1 medium onion, chopped
- 1 clove garlic, minced
- 4 Tbsp. butter, divided
- 1/2 c. chopped almonds, toasted
- 1 (1 oz.) jar chopped pimentos
- 2 (2.5 oz.) jars mushrooms, drained and chopped
- salt and pepper to taste
- 1/2 c. whipping cream
- cayenne pepper
Directions

1Prepare rice according to package directions.

2Set aside.

3In a medium skillet, saute onion and garlic in butter.

4Add almonds, pimentos, mushrooms, salt and pepper.

5Fold in cooked rice.

6Fold mixture into an oiled, 2-quart baking dish.

7Pour whipping cream over rice mixture.

8Bake at 350° for about 15 minutes or until thoroughly heated.

9Sprinkle with cayenne pepper.

10Serves 6.
