- 1 eggplant, diced
- 1 green pepper, chopped
- 1 qt. chopped tomatoes
- 4 Tbsp. butter
- 1 1/2 c. bread crumbs
- 1 onion, chopped
- 1 tsp. salt
Directions

1Preheat oven to 350°.

2Pare eggplant and dice.

3Melt 2 tablespoons butter in skillet.

4Add green pepper and onion. Cook on low for a few minutes.

5Add tomatoes, eggplant, salt and black pepper.

6Cook 10 minutes.

7Place in shallow greased dish. Melt 2 tablespoons butter; stir in bread crumbs and sprinkle over eggplant.

8Bake until crumbs are brown, 15 to 20 minutes.
