Ingredients

  • 1/2 c. roasted almonds
  • 2 lb. firm tofu, cut into 3/4-inch pieces
  • 1/2 c. soy sauce, divided
  • 2 Tbsp. peanut butter
  • 1/4 tsp. garlic powder
  • 1 tsp. onion powder
  • 4 Tbsp. oil, divided
  • 1 large bell pepper, cut in 1-inch squares
  • 6 to 8 green onions, cut in 1 1/2-inch pieces
  • 3 stalks celery, cut in 1-inch pieces
  • 1 (8 oz.) can water chestnuts, sliced
  • 1/2 tsp. powdered ginger
  • 2 c. cold water
  • 2 Tbsp. cornstarch

Directions

    Whip together 1/4 cup soy sauce, peanut butter, garlic powder and onion powder.

    Mix with the tofu cubes and marinate for 2 hours, stirring occasionally.

    Heat 2 tablespoons of oil in skillet; add tofu and brown until liquid is absorbed.
