  • 4 15/16 tablespoons unsalted butter
  • 4 egg whites
  • 1/2 cup almond flour
  • 6 3/8 tablespoons flour
  • 15/16 cup icing sugar
  • 1 pinch baking soda

Directions

    Add the butter to a pan. Gently swirl the pan as the butter begins to melt. Cook until the white milk solids have browned, about 3-4 minutes and the butter has taken on a deep golden colour and has a nutty fragrance. Be careful not to burn it! Put aside and let it cool down.

    Sift all dry ingredients together.

    Beat the egg whites with a fork and add to dry mixture.

    Pour in cooled butter, cover and leave to rest in fridge for 1 hour.

    Preheat oven to 180 degrees Celsius . Pour the batter in financier moulds or small cupcake moulds. Bake for 12-20mn depending on size of moulds of until nice and golden.
