  • 4 medium eggs
  • 2 c. skim milk
  • 4 Tbsp. diet margarine
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. coconut extract
  • 1/2 c. self-rising flour
  • 2 slices diet bread
  • 1/2 c. artificial sweetener (2 Tbsp. sugar substitute)
  • 2 pkg. apple snacks

Directions

    Combine all ingredients in blender.

    Turn on; count slowly to 10.

    Turn off.

    Pour into 9-inch pie pan that has been sprayed with Pam.

    Sprinkle with cinnamon.

    Bake at 350° for 40 minutes.
