- 1 c. margarine or butter
- 2 c. sugar
- 4 eggs
- 1 c. mashed ripe bananas
- 4 c. sifted flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 (15 1/4 oz.) can crushed pineapple
- 1 c. shredded coconut
Directions

1Cream margarine or butter and sugar until light and fluffy. Add eggs and mix well.

2Stir in banana.

3Sift together flour, baking powder, baking soda and salt.

4Add to creamed mixture and mix well.

5Fold in undrained pineapple and coconut.

6Pour into 2 greased and floured 9 x 5-inch pans.

7Bake at 350° for 1 hour and 10 minutes or until tests done.

8Remove from pans to cool.

9Makes 2 loaves.
