Ingredients

  • 1 c. margarine or butter
  • 2 c. sugar
  • 4 eggs
  • 1 c. mashed ripe bananas
  • 4 c. sifted flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1 (15 1/4 oz.) can crushed pineapple
  • 1 c. shredded coconut

Directions

    Cream margarine or butter and sugar until light and fluffy. Add eggs and mix well.

    Stir in banana.

    Sift together flour, baking powder, baking soda and salt.

    Add to creamed mixture and mix well.

    Fold in undrained pineapple and coconut.

    Pour into 2 greased and floured 9 x 5-inch pans.

    Bake at 350° for 1 hour and 10 minutes or until tests done.

    Remove from pans to cool.

    Makes 2 loaves.
