- 3 tablespoons vegetable oil
- 1 each bay leaves
- 1 each onions
- 2 teaspoons ginger
- 2 teaspoons garlic
- 2 teaspoons cumin seeds
- 4 teaspoons turmeric
- 2 teaspoons chili powder
- 3 teaspoons yogurt, plain
- 4 teaspoons salt
- 2 teaspoons coriander ground
- 1 pound potatoes
- 1 each tomatoes
- 1 each sweet red bell peppers
Directions

1Heat oil, add bay leaf and onion.

2Fry for 3 to 4 minutes.

3Add ginger and garlic and fry for another minute.

4Add mustard and cumin seeds.

5The potatoes should be sliced, and the tomatoes and capsicum cut up.

6Add these, mix well, and cook for 4 to 5 minutes, continuously stirring.

7Sprinkle with turmeric, coriander and chili powder.

8Beat the yogurt and blend into a smooth mixture.

9Add yogurt and salt.

10Mix gently, cover and cook for about 10 minutes on low heat.
