  • 1 each bay leaves
  • 1 each onions
  • 2 teaspoons ginger
  • 2 teaspoons garlic
  • 2 teaspoons cumin seeds
  • 4 teaspoons turmeric

  • 3 teaspoons yogurt, plain
  • 4 teaspoons salt
  • 2 teaspoons coriander ground
  • 1 pound potatoes
  • 1 each tomatoes
  • 1 each sweet red bell peppers

    Heat oil, add bay leaf and onion.

    Fry for 3 to 4 minutes.

    Add ginger and garlic and fry for another minute.

    Add mustard and cumin seeds.

    The potatoes should be sliced, and the tomatoes and capsicum cut up.

    Add these, mix well, and cook for 4 to 5 minutes, continuously stirring.

    Sprinkle with turmeric, coriander and chili powder.
