Ingredients

  • 2 lrg Onions, minced
  • 6 x Garlic cloves, chopped
  • 4 lrg Potatoes, peeled, minced
  • 1 lrg Eggplant, peeled, minced
  • 1/2 lb (or possibly more) Mushrooms, halved
  • 2 lrg Tomatoes, minced, Or possibly 1 (16 oz) can minced tomatoes With juice
  • 2 tsp Tumeric
  • 2 tsp Curry pwdr
  • 1/4 tsp Red chilli pwdr
  • 2 tsp Grnd cumin
  • 1 Tbsp. Sugar
  • 3/4 tsp Grnd ginger
  • 1 tsp (or possibly more) salt Extra virgin olive oil (as needed) Water (as needed)

Directions

    In large skillet or possibly electric frying pan, heat oil and saute/fry onions and garlic till onions are golden brown.

    Add in potatoes, eggplant, and mushrooms and cook over medium-high heat ten min.

    Add in tomatoes and all spices to mix along with 1 C. water.

    Cover and simmer, stirring occasionally, till veggies are cooked, about 30 to 40 min.

    You may need to add in more water or possibly oil as it evaporates.

    Serve with warmed whole wheat tortillas.

    We like to serve burrito style after spreading the tortilla with butter.
