  • 1 kg chicken, cut up into serving portion
  • 1 can coconut milk
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 large potato, diced
  • 1 medium carrot, sliced
  • 1 1/2 cup warm water
  • 1 tsp brown sugar
  • 2 tbsp cooking oil
  • 1 salt and pepper to taste
  • 3 tbsp curry powder
  • 1 tsp chili powder (you can add more if u want spicy)
  • 3 tbsp lemon or calamansi juice

Directions

    Saute garlic and onion in cooking oil.

    Drop in chicken pieces, cook covered for 5 minutes.

    Add the curry and chili powder and mix until equally distributed to the chicken.

    Pour in coconut milk and water.

    Let it boil for 10 minutes, stirring ocassionally.

    Add vegetables, calamansi or lemon juice and sugar.

    Mix well.

    Season with salt and pepper.

    Simmer gently, stirring frequently until chicken and vegetables is tender.

    Serve with hot steamed rice.
