Ingredients
- 1 kg chicken, cut up into serving portion
- 1 can coconut milk
- 1 onion, chopped
- 1 clove garlic, minced
- 1 large potato, diced
- 1 medium carrot, sliced
- 1 1/2 cup warm water
- 1 tsp brown sugar
- 2 tbsp cooking oil
- 1 salt and pepper to taste
- 3 tbsp curry powder
- 1 tsp chili powder (you can add more if u want spicy)
- 3 tbsp lemon or calamansi juice
Directions

1Saute garlic and onion in cooking oil.

2Drop in chicken pieces, cook covered for 5 minutes.

3Add the curry and chili powder and mix until equally distributed to the chicken.

4Pour in coconut milk and water.

5Let it boil for 10 minutes, stirring ocassionally.

6Add vegetables, calamansi or lemon juice and sugar.

7Mix well.

8Season with salt and pepper.

9Simmer gently, stirring frequently until chicken and vegetables is tender.

10Serve with hot steamed rice.
