Ingredients

  • 250 grams large green olives with seeds, drained
  • 250 grams black olives with seeds, drained
  • 3/4 cup extra virgin olive oil
  • 1 tbsp finely chopped rosemary
  • 1 tbsp finely chopped oregano
  • 1 tsp finely grated lemon zest
  • 2 clove garlic, finely sliced
  • 1/2 tsp chilli flakes

Directions

    Combine, mix and toss all the ingredients in a medium bowl.

    Cover and set aside to marinate for 5 hours.

    Marinated olives can be stored in refrigerator for up to 1 week.

    But we should bring the olives back to room temperature before serving because oil will solidify in the fridge.
