Ingredients

  • 18 slices toasted bread, cut in 1/2-inch cubes
  • 2 c. diced, cooked potatoes
  • 1 c. shredded carrots
  • 3 c. diced celery
  • 1/2 c. chopped parsley
  • 6 eggs, well beaten
  • 1 qt. chicken stock
  • 2 c. cooked, diced chicken

Directions

    In a large bowl, combine bread cubes, potatoes, carrots, celery and parsley.

    Add beaten eggs and chicken stock.

    Fold in diced chicken.

    Mix all ingredients until blended.

    Bake at 350° in a well buttered 13 x 9 x 2-inch pan for 45 to 50 minutes until firm.

    Serves 12 to 16.
